October is all about TRICKS and TREATS, but for some of our kids the selection of fun Halloween eats can be limited.  Explore Asian Foods has a great way for us to provide a fun, healthy meal to our GFCF kiddos and still celebrate the season with style.  Our main ingredient: Organic Black Bean Spaghetti! 

Explore Asian GFCF Organic Black Bean Spaghetti

Explore Asian Organic Black Bean Spaghetti shaped noodles are GFCF, organic and most importantly YUMMY!  Made from only 2 ingredients, Organic Black Beans and Water, these high in protein noodles are a parent's dream and a kids delight!

These noodles are great with tomato sauce or in an Asian stir fry but we decided to do something celebrating the season!

Spooktacular Explore Asian GFCF Black Bean Noodles and Cheesy Squash


1 package of Explore Asian Organic Black Bean Spaghetti Shaped Pasta

1 cup of cooked squash (frozen or fresh roasted)

1/2 cup chicken or vegetable broth

1/4 cup Daiya cheddar cheese

I teaspoon of Earth Balance organic margarine

salt and pepper to taste

Garnish with black olives, salsa, cheese or other tasty condiments


First make a decision of whether you would like to make a quick 10 minute version or if you have all day.  If you are doing the 10 minute version I recommend you use frozen squash like this:

If you have all day and you want to take the time to roast some fabulous fresh squash - go for it!  Here are some of the many varieties that are on sale this time of year.  They are colorful and yummy. 

Cut them in half, scoop out the seeds, prick their skins with a fork and lay them face down on a lined cookie sheet and bake at 325 degrees until a fork goes easily through the flesh.  Let cool and then scoop the yummy flesh out and either use or refrigerate until ready to use.

Add Explore Asian Organic Black Bean Pasta to 8 cups of boiling water.  Simmer for 7-8 minutes, stirring occasionally.

Heat chicken or vegetable broth and Daiya cheese, in a microwave safe dish for 2 minutes or until the cheese begins to melt.  Add cooked squash, mix well and heat through. Add Earth Balance margarine.  Salt and pepper to taste.

Drain and rinse the pasta. 

Arrange the pasta on the plate, pour your lovely orange cheesy squash over the pasta and garnish with more Daiya cheese, black olives, salsa or other treats!

***Just a little note for finicky eaters:  If your child has never had squash before there are some ways to gently get them to happily eat squash

1. The first time you make this dish reduce the amount of squash you use and increase the chicken broth and cheese. If your child likes tomato sauce feel free to mix that in as well.  Slowly over time add more squash and less cheese to help our child's palette get used to this new taste.

2. Include your child in the process of picking out a squash.  Show them that squashes are like pumpkins, you can even have your child scoop out the seeds with a spoon or pull them out by hand.

3. Use words when preparing the dish to help your child build receptive language, but when it's time to eat minimize your words and simply model the behavior of eating your pasta and enjoying it.

4. Encourage your child to garnish their own pasta with things they like.  Allow them to decorate it themselves.  Whoever said, "Don't play with your food!" didn't know how to get finicky eaters to enjoy their food!
