Eating healthy doesn't have to be about giving up the foods you love! Why not transform your families favorite dishes into the healthiest meal possible? It's easy and tasty when you know a few tricks. My family LOVES spaghetti and meatballs but I don't love all the carbs, my son and I can't have gluten or cheese - so what are we left with?? Truthfully, the yummiest, healthiest meal possible by just changing a few things. Let's start my talking about the pasta..
Explore Asian is my new best friend. They make a line of ORGANIC, GLUTEN-FREE pastas made from BEANS!!! I can tell you they are healthy, high in protein and easy to cook. They don't fall apart like other gluten-free noodles! My son will tell you they taste GREAT!
For my spaghetti I chose Explore Asian Organic Edamame Spaghetti. It's delish and I love the green color. If you are avoiding soy you will want to try Explore Asian's Organic Black Bean Spaghetti or Explore Asian's Organic Mung Bean Fettuccine, which is my favorite!!!!
The pastas are super easy to cook and they will up the nutrition in your spaghetti and meatballs! So let's talk about getting those meatball as healthy as possible.
Here is our tool kit:
Ground Turkey - 3 lbs.
1 lb. Fresh Organic Spinach
3-4 Cloves of Organic Garlic
Salt, Pepper to taste
Organic Olive Oil (I use garlic flavored)
1 food processor
1 large baking dish
Preheat your oven to 350 degrees
Wash the spinach thoroughly and cram it into your food processor, layer the peeled cloves of garlic between the spinach. Add 1 teaspoon of Olive Oil on the top.
Process these items in your food processor until it is a lovely green runny paste that shows no leaves or garlic chunks. You may need to stop the processor and smash the leaves down several times to achieve this. Add salt and pepper to taste.
In a large bowl, mix the turkey and the spinach mixture until it is completely blended. It will be a crazy green wet mess. Don't worry, it tastes great when it's cooked.
Form meatballs, they will be wet, place them close together in the baking dish. Bake at 350 degrees for 40 minutes and then turn the meatballs. When you look at them it is going to look like no meatball you have ever seen. It looks like meatball soup. Don't worry, you're doing it right. Turn the meatballs and let them cook another 20 minutes. Take the cooked meatballs out of the oven and add them to a simmering pot of your favorite, healthiest spaghetti sauce. Cook your Explore Asian pasta and get ready for a mouth treat!!
****For very finicky eaters you could make the choice to start with less spinach, but the truth is I haven't had anyone refuse one of these meatballs. They are juicy, tasty and healthy!!!
