It's that time of year where everything is red, white and blue! It's really fun to get the kids involved too, but many of us choose not to give our children artificial food colors and flavors. Here are some healthy things my family makes to celebrate the fourth in style.
Star-tastic Fruit Salad
White Fruit - I have used white peaches, white nectarines, Crenshaw melons and even bananas
Red/Pink Fruit - I have used watermelon, raspberries and strawberries - I prefer the watermelon because you can cut star shapes out of it.
Use a graduated star cookie cutter to cut shapes out of the fruit. Let the kids help if they are old enough! It is great finger, hand and "heavy work" skill building.

These are one of my favorite things to make! They are easy and a super healthy treat. Make sure you have BPA free popsicle molds.
Red Fruit/Juice: My favorite is blood orange juice but you can use any combination of raspberries, strawberries, watermelon, cherries, pomegranate etc. Depending on your child you can use just juice or juice with fruit chunks.
White Fruit/Juice: I use white peach, white nectarine and or white grape juice
Blue Fruit/Juice: Blueberries or blackberries
Pour a small about of Red into your popsicle mold - add red cut fruit if desire. Freeze. Mixture should be slushy but not frozen hard
20 min - 1 hour later, add white fruit/ juice. Freeze.
20 min - 1 hour later layer blue fruit in mold. Add white grape juice or sparkling water add popsicle stick (run it under hot water if you cant get the stick all the way in)
Freeze until hard. Serve! Enjoy!

Organic Blue Tortilla Chips
Organic White Corn Tortilla Chips
Optional: Guacamole, Black Olives, Ground Turkey, Tomatoes, Sausage and Green Onions
Layer the different colored tortillas with salsa and cheese. Add other desired toppings. Heat in microwave or oven until cheese has melted. Enjoy!
