Lessons From The Hunchback of Notre Dame

Life is short, so I’m just going to say this…there are some performances in life that should not be missed… John McGinty as Quasimodo is one of them…actually, technically…two of them.  It’s beautifully complicated.  John McGinty is a talented actor, who happens to be deaf.  Take that in for a moment. Quasimodo is referred to as being hard of hearing because of the bells, but the role is not written for a deaf actor.  When Glenn Casale made the decision to cast McGinty, he knew that he was going to be heading down a path that would require everyone involved in the show to make adjustments.  It was a choice he was willing to make.  We all need to be grateful.  The result is something that is bigger than can be imagined.

Special Needs Dads are Heroes!

For my wonderful husband and all the great special needs Dads out there! by Shannon Penrod My 8 year-old grand-niece asked me the either day why I waited so long to get married…I told her the truth…I waited until I was ready and had met the right person. I met my husband 10 years before I went on a date with him, but I wasn’t ready. I wish I had been, but I wasn’t, I still had some ridiculous ideas about what a good boyfriend looked like, because I wasn’t yet thinking of what a good husband and father looked like. I had a great example, my father was a great man. My Dad was a big man in every way there was, his heart was big, his passion was big, his joy in being a father and husband was big…huge, in fact. So, when I was ready, I knew what to look for. My husband is one of the kindest, most generous, funniest men to have ever walked the planet. I recognized this in him immediately and fell madly in love. We got married and I thought I knew my husband; but I could not have had any idea of the depth of his character until our only child was diagnosed with Autism. GFCF Pumpkin Stew

By Shannon Penrod This is a reprint of a blog from 2011. One of the greatest things we can do for our children is make healthy food fun and colorful. Let’s face it, we have to compete with electric blue candy! How’s a mom supposed to get their kids to eat vegetables when faced with neon sugar? I say fight fire with fire! Get your kids involved, make it fun, make it colorful. Last week we visited our local pumpkin patch and for a mere five dollars I got a huge squash that resembled a pumpkin. I made my son help me pick it out and I told him my plan to make pumpkin stew and cook it in the pumpkin. He was really into it. Next we went to the farmer’s market and I told him we needed to pick out vegetables to go in the stew and we needed as many colors as we could find. He calls that eating the rainbow and he loves to go to search the market for interesting colors. This time he picked yellow and red peppers, some rainbow colored chard, yellow and green squash, japanese eggplant and carrots. Great ingredients for a stew! Festive Holiday Pasta with Organic Edamame and Mung Bean Fettuccine, Prosciutto and Red Pepper Holidays are about making things special. This GFCF recipe is great for a special occasion or when you are having people over who have no idea what GFCF means! Delight guests with this dish and afterward you can tell them how healthy it is!!!! I love this recipe because it resembles a creamy Alfredo sauce, without all the fat cholesterol and dairy products. It also makes the kitchen smell like an upscale restaurant! Kids and adults will both enjoy this dish. Ingredients: * Explore Asian Organic Edamame & Mung Bean Fettuccine * 1 lb Brussels Sprouts/ or Broccoli * 4 oz Cubed Prosciutto or No Nitrate Turkey Pepperoni * 1/2 red pepper diced * 1/2 cup Daiya Mozzarella Cheese substitute * 1 cup Chicken Broth * 1 tbsp Extra Virgin Olive Oil * 1 tbsp Crushed or Minced Garlic * Salt and Pepper to taste Directions: 1. Eating healthy doesn't have to be about giving up the foods you love!  Why not transform your families favorite dishes into the healthiest meal possible?  It's easy and tasty when you know a few tricks.  My family LOVES spaghetti and meatballs but I don't love all the carbs, my son and I can't have gluten or cheese - so what are we left with?? Truthfully, the yummiest, healthiest meal possible by just changing a few things.  I use Explore Asian Organic Noodles and I make turkey meatballs with a hidden ingredient: Spinach!
